Tomato Bean Soup

This is VERY high in fibre (14+grams per serving), lycopene and other nutrients. It freezes well also.



  1. Saute the chopped and diced vegetables in the oil until softened
  2. add mushrooms and garlic after several minutes
  3. Add stock, tomatoes, chickpeas and beans. Heat through.
  4. Stir in chopped spinach
  5. Season to taste with salt and pepper, oregano, rosemary etc.
Note: I also have added leftover brown rice or barley.
