Shrimp Scampi Pasta


1 lb shrimp 2 cups spinach 2 cloves garlic 1 lb mushroom tamari red pepper flakes Black pepper (freshly ground) olive oil buckwheat soba noodles


Cook noodles and drain. In separate cast iron or thick bottomed pan, saute mushrooms with olive oil on med-high heat (don't stir until brown on one side), then add crushed garlic, tamari and spinach. Mix well and then add drained pasta to dish. Stir to heat. Put on serving platter and garnish with fresh basil and chopped tomatoes.
