Andy's healthy peppery lentil pottage

Ingredients:

Wash lentils first and Cook them according to instructions(usually I add 1 cup lentils to 1- 1/2 cups water and cook for about 15-20 minutes). While lentils are cooking gently fry onions pepper, garlic and leek in olive until softened, adding Cayenne/Turmeric/ground ginger mixture to it. Stir well for a minute to mix in spices then pour on the can of tomatoes (usually I only use about 3/4 of can) and grape juice. Stir well and let simmer. When lentils are cooked, drain off water and add cooked lentils to onion tomato mixture with sunflower seeds. Stir well and gently cook for a further 10-15 minutes. You don't want it too runny but if its too dry you can add tomatoes left from earlier Taste test for how you like it? Add more cayenne if you like it hotter or add whatever else you fancy. Sometimes I will add a can of mackerel fillets or some leftover vegetables whilst cooking. It makes a good healthy very tasty meal at not much cost.
