Way-Too-Easy! Black Bean Soup

As it says above, this recipe is way to easy! I really hope you enjoy it. I know I do, because I do not always have time to soak and boil the beans.



Sautee the onions, bell pepper and garlic. Add the black beans and the water. Bring to a boil then lower the heat and let it simmer for about 20-30 minutes. Season to taste. Serve in a bowl. If you wish to add a scoop of rice, that is optional. Garnish generously with cilantro, green onions and the crunchy tortillas.
