Pasta with Lemon and Spinach

From Parrish:



  1. While pasta is cooking al dente, sauté garlic, lemon juice and lemon peel in butter/oil.
  2. Place drained hot pasta in bowl, place (uncooked) spinach on top, pour lemon/oil mixture over the top.
  3. Place cheese on top.
  4. Toss all ingredients.
The hot lemon mix wilts the spinach, and the cheese melts beautifully. Sprinkle with nuts. I cook this with sautéed shrimp - it's fast, easy, beautiful to look at, will 'wow' your guests, and with fresh fruit for dessert, will make you feel so healthfully superior you'll allow yourself a peanut butter cookie for a snack! (serves 6)
