Lynnette's Vegetarian Chili

Serves 6-8



"Healthy saute" onion, pepper & garlic in 1 tsp water, broth, or use olive oil. Saute onion, and after 3 minutes, add the pepper & garlic. Add tomatoes, and then the rinsed and drained beans. Add corn and then seasonings to taste. Simmer until vegetables are tender and favors are melded. Top with a small amount of shredded smoked cheese when serving (or, use a smoked seasoning while simmering). Cold, this recipe also goes well atop a Mexico salad.
