Cinnamon Chicken with Sweet Potatoes

If you are looking for an unusual flavored chicken dish, this is a dish for you. It will remind you of the holidays

Prep and Cook Time: 30 minutes

1 large sweet potato, peeled and cut in 1 inch cubes
1 onion, chopped
3 cloves garlic, sliced
2 ˝ cups chicken broth
2 TBS chopped orange rind
1 4 inch cinnamon stick broken into pieces
8 whole cloves
2 boneless, skinless chicken breasts (6oz each)
5 dried apricots, cut in half
3 dried prunes cut in thirds
2 TBS coarsely chopped walnuts
2 TBS chopped fresh parsley
salt and white pepper to taste


  1. Preheat oven to 400. Place chicken breast and cubed sweet potato together in baking dish. Bake covered with foil for 30 minutes or until done.
  2. While chicken and potatoes are baking, Healthy Sauté onion in medium saucepan over medium low heat for about 5 minutes stirring frequently. Add garlic and continue to sauté for another minute. Add stock, orange rind, cinnamon stick, and cloves and bring to a boil on high heat. Reduce heat and simmer for 15 minutes.
  3. Strain broth and add apricots, prunes and chopped walnuts and cook for another 5 minutes.
  4. When chicken and potatoes are done place on plate and top with broth and dried fruit and walnuts. Serve sprinkled with chopped parsley.
