Baked Salmon & Walnut Patties With Red Bell Pepper Sauce

This is a simple nutritious dish that is extra delicious served with red pepper sauce It is one of those dishes that is so satisfying, especially when you don't have time to cook. The red pepper sauce will exceed your need for this dish. However, it will store for several days in the refrigerator and can be used on many dishes. You will enjoy having this as a staple condiment in your refrigerator.

Baked Salmon & Walnut Patties With Red Bell Pepper Sauce Prep and Cook Time: 30 minutes

1 6½ oz can of pink salmon, drained
1/4 cup chopped walnuts
¼ cup finely minced onion
2 clove garlic, pressed
½ cup crushed whole grain cracker
1 egg white
1 tsp prepared Dijon mustard
¼ cup chicken or vegetable broth
1 TBS chopped fresh parsley
salt & pepper to taste

Red Pepper Sauce
2 red bell peppers cut in about 1 inch pieces
½ large onion, chopped
4 cloves garlic, chopped
¾ cup vegetable stock
3 TBS balsamic vinegar
2 TBS ground walnuts
pinch of red pepper flakes
salt & pepper to taste


  1. Chop pepper, onion, garlic and Healthy Sauté in medium sauté pan over medium low heat for about 5 minutes stirring frequently. Add stock and cook covered until tender, about 15 minutes. Add balsamic vinegar and red pepper flakes right before removing from heat.
  2. Blend peppers and onions with rest of ingredients.
  3. Preheat broiler on low. Combine all salmon ingredients and form into 4 patties.
  4. Place under broiler in a baking dish, and cook for about 5 minutes on each side. Serve with sauce.
