- 4 cups cooked brown rice
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 cup corn
- 1 cup black beans
- 4 TBS favorite vinaigrette
- 1 tsp ground cumin
- pinch of cayenne
- 2 TBS chopped cilantro
- Combine 4 cups cooked brown rice, diced bell peppers, corn, and black beans. Toss with your favorite vinaigrette.
